How to Cook Perfect Asparagus

Asparagus, believe it or not, can actually be really tasty when roasted or steamed. If you're a little shy of the bitter taste and weird texture, try this:
Preheat your oven to 425°F. Line a baking sheet with parchment paper to make cleanup easier.
Wash the asparagus spears and trim an inch or two off the thick ends.
Lay them on the parchment paper and drizzle with olive oil. Use tongs to roll the spears around and make sure each one has a nice coating of oil, but try not to leave them layered on top of each other. Sprinkle on salt and pepper to taste.
Roast for about 12-15 minutes, or until you see the asparagus shriveled up a little bit. The pointy ends should be nice and crispy.
Serve with extra salt, pepper, or butter as an option to taste.
I've personally never seen this done wrong; the asparagus always turn out surprisingly delicious.

Thank-you so much for publishing this, Katelyn Weel! I don't really care for asparagus, but my boyfriend loves it. I tried making it a couple of weeks ago and it turned out mushy. (I over-cooked it.) Wish I had read this first! Definitely gonna give it another go, using your method!
I have a small patch of asparagus growing in my garden. One of only two veggies that grow back every year. Each year we get more asparagus and with the price of it, it's a good veggie to grow. I love it. I always steam my asparagus but I will definitely try it this way. I also like it in stir fry.

Fishtiger, its interesting that you grow asparagus in your backyard! That's not a bad idea as it really is one of the more expensive veggies.. there are places in my area where it grows stray on the side of the road, I've seen people stopped by the side of the road picking it! Now I don't think I'd go that far but growing it in the backyard sounds great :)
I love asparagus! However...mine NEVER comes out as good as if ordered in the restaurant. I'm going to try this next time I cook some. :)
This recipe rocks! Didn't alleviate the bitterness of this batch of asparagus but....I would never have thought to oven roast the asparagus even though I throw it on the BBQ grill. I used the parchment paper to roll the spears thru the EVOO, salt and pepper. Turned out amazing - still served with Hollandaise to avoid an Easter riot. Really a nice change from steamed. Thanks!

My son actually does love asparagus, and we usually steam it for him. I also agree that roasting is delicious!
